  1. Boil the beet in the broth for 30 minutes.
  2. Add the potatoes, carrots, and bay leaf and cook another 10 minutes.
  3. Heat a skillet and add the onions and a pinch of salt to fry them. Do not add oil.
  4. When the onions turn translucent, add the tomato paste and stir. Fry for another 7 minutes.
  5. Remove the onion pan from the stove and add in the garlic, stirring to break everything up.
  6. Add the contents of the onion pan to the pan with the beets, broth and potatoes.
  7. Turn the heat to low and cook another 20-30 minutes or until potatoes are soft.
